This morning on a trip to our local “Fresh Market” for some bananas and strawberries to make our usual breakfast smoothie, as I was leisurely combing the aisles, (which is something I often do in hopes of finding something new and delicious to add to my clean food fair), I was inspired to buy a bag of Almond Flour and attempt making Strawberry Banana pancakes with it. It may have only been a thursday, and pancakes are something we usually associate with sleepy weekend mornings, but I figured it would add some sweet yumminess to the day so I went ahead and made some!
I’ve made pancakes with coconut flour many times before and loved them but this was my first time using ground almond flour so I was interested to see if they would taste as good…
And well the verdict is that almond flour makes a damn yummy guilt-free pancake! I just drizzled a little honey over them and they were delish!
Other than being appealing to the taste buds, almond flour is also gluten-free and quite nutritious; Almonds are low in carbohydrates, low in saturated fat, high in dietary fiber, high in vitamin E, Calcium, Riboflavin, Copper, Zinc and Magnesium, ( all of which are essential for an ELAA body!)
So in saying that, here is the recipe for my thursday morning
GLUTEN FREE ALMOND FLOUR STRAWBERRY BANANA PANCAKES
1 cup Almond Flour
1/4 Cup of water
2 tbsp olive oil
2 eggs
1 tsp madagascar bourbon vanilla extract
a few drops of liquid Stevia
fresh bananas (chopped up)
fresh strawberries (chopped up)
Its as easy as throwing all the ingredients in a bowl together, adding your choice of fruit, blueberries, raspberries, or leave it plain and pour a little into a heated pan with a little coconut oil or olive oil.
Let them brown a little on either side and serve warm. Drizzle with a little good quality honey or agave, or your choice of natural healthy sweetener!
